The next day we found ourselves at the airport, eagerly waiting for our rental car. Two days into our Irish adventure driving on the opposite side of the road for ourselves was starting to feel almost normal! (Almost) It’s one thing to be a wide-eyed passenger princess marveling at the scenery; it’s another thing entirely to be the one behind the wheel, dodging stone walls and sheep. Fortunately, my daughter always takes the wheel when we travel and she makes it look effortless. The power of DNA her Irish roots shining through. So, here is part one of the ultimate mother-daughter road trip guide to Ireland and exploring Ireland together.
Heading to Cork: A Colorful Seaside Town – Exploring Ireland together
Off we went in a compact little car, just big enough to squeeze in our suitcases, and hit the road toward Cork. Highway driving in Ireland is its own kind of adventure. The fast lane is on the right, the slow lane is on the left, and somehow my daughter zipped along like she’d been doing it her whole life. Surprisingly, the road signs were refreshingly clear, and the scenery was just stunning. Lush green hills, tiny villages sprinkled along the way and the occasional castle ruin standing proudly against the skyline. By lunchtime, we rolled into Cork so ready to explore. Cork is a port town with one of Europe’s best natural harbors. Cork is known as Ireland’s Foodie Capital. I could see why- every corner had a cozy café, a bustling market or the unmistakable charm of a local pub.
We wandered down the main street, which was lined with shops, restaurants, and shops that sell beautiful Irish woolen sweaters and scarfs. Interestingly, I couldn’t help but notice how much the Irish love their ice cream. It didn’t matter if it was sunny, cloudy or downright drizzly, ice cream parlors were packed. Naturally, we had to try it. And… Let me tell you, Irish dairy? Absolutely, next-level delicious!! Creamy, rich and absolutely worth the long lines. I suddenly understood why people were walking around in sweaters and scarves, happily licking their cones.

Off to Killarney: A Scenic Drive
After a while, and a bit more of exploring in Cork we hit the road again, this time bound for Killarney. Nestled on the shores of Lough Leane, County Kerry. Killarney is a must see stop on the famous ring of Kerry drive. The landscape was breathtaking, rolling hills dotted with sheep that couldn’t be bothered to move for cars. More than once, we had to stop and wait as a few fluffy stragglers crossed the road from one pasture to another, clearly on their own schedule.
Plans for Killarney: Trails and Waterfalls
The plan for the next day exploring Ireland together was that my daughter would go horseback riding along the trails in the morning. After that we’d explore Torc Waterfall in Killarney National Park. County Kerry is known for its rugged, mountainous terrain bordered by the serene Lakes of Killarney. The waterfall itself is 110 meters long, surrounded by lush greenery that looks like it was plucked straight from a fairytale. After our outdoor adventure we’d head back into town for lunch and a little exploring.
A Cozy Stay in the Irish Countryside – Exploring Ireland Together
That evening we arrived at a lovely Airbnb set in someone’s home, just a bit outside of town. The location was so beautifully nestled among rolling hills, with those predictable narrow, winding roads lined with rock walls. Driving with precision was a must! We pulled up late in the afternoon with the sun shining brightly, the view was nothing short of magical, it was set on a hill overlooking a valley and a shimmering lake.
We were greeted by a black and white cat who had confidently stationed himself in the middle of the road, only to hop away and trot towards the house as if leading us to the right place. Our hostess was warm and gracious, welcomed us in and showed us to our quarters. She promised a homemade breakfast would be waiting for us in the morning. Her housecat made a brief appearance to say hello, then sauntered off to claim a sunny spot in the kitchen.
The house itself was a marvel with large windows in every room, offering stunning views of the sunset. With no street lights to dim the sky the stars came out in full glory glimmering like diamonds against the black velvet of the night.
Horseback Riding and Waterfalls
The next morning, after a lovely breakfast and a warm chat with our hostess, we were off to the stables. My daughter returned 3 hours later, absolutely exhilarated. The overall experience was wonderful, the horse she rode, the friendly people she met and the breathtaking scenery along the trails. You can check out the stable here: Killarney Riding Stables
Now on the agenda was Killarney National Park and afterwards, the Torc Waterfalls. After a slight incline and a bit of trail walking we found ourselves at the foot of the waterfall. Nestled into a corner of the park, it tumbled down gracefully, layer after layer, a true masterpiece. We followed the trail up a winding rather steep stone staircase (with no handrails, Yikes!), with each level the view grew more impressive. The deeper we went, the more the forest embraced us. The smell of the earth and the silence of the forest was very special to experience. At the summit we were rewarded with a stunning view of the lush forest stretching out before us and one could see in the far off distance a beautiful lake.
By then. lunch was calling.


Lunch in Killarney
Driving into Killarney felt like stepping into a postcard, quaint, old-world architecture mixed with just the right touch of modern charm. Open-air cafes lined the sidewalks, many people meandered through the streets and the energy was vibrant and alive. We strolled through the bustling town before setting our sights on our next adventure, the Connemara region and the town of Clarinbridge. Another Airbnb awaited us, and the next morning a 4 hour bike tour through the countryside was on the agenda. Come Along to part two of exploring Ireland together!
